Ingredients
- 1 fresh, ripe butternut squash
- Pinch of salt (optional)
Instructions
- Peel the butternut squash and remove the seeds. Cut it into small cubes, roughly 1-inch in size.
- Preheat your oven to 375°F (190°C). Spread the squash cubes on a parchment-lined baking sheet. Roast for 20-25 minutes, or until tender and slightly caramelized.
- Allow the roasted squash to cool to room temperature before moving to the next step.
- Place the squash cubes in a dehydrator and set it to 135°F (57°C). Dehydrate for 8-10 hours, or until the squash is completely dry and brittle. Alternatively, use your oven at the lowest temperature setting, checking every 2-3 hours.
- Transfer the dried squash into a blender or food processor. Grind it into a fine powder, pausing to check for clumps. You may need to work in batches depending on your equipment.
- Pour the powder into an airtight container and store it in a cool, dry place. It should last for up to 6 months.
