- 2–3 medium sweet potatoes
- 2 tablespoons olive oil
- 1 tablespoon fresh rosemary, chopped (or 1/2 tablespoon dried rosemary)
- 1 teaspoon garlic powder
- Salt, to taste
- Pepper, to taste
- 2 tablespoons honey
- 1 tablespoon Dijon mustard
- 1 tablespoon Greek yogurt (optional)
Instructions
- Preheat the oven to 425°F (220°C).
- Wash and peel the sweet potatoes. Cut them into thin, even strips about 1/4-inch thick.
- In a large bowl, toss the sweet potato strips with olive oil, rosemary, garlic powder, salt, and pepper until evenly coated.
- Spread the fries out in a single layer on a parchment-lined baking sheet. Avoid overlapping.
- Bake for 15 minutes, then flip the fries using a spatula. Bake for another 10-15 minutes, or until golden and slightly crispy.
- While the fries bake, whisk together honey, Dijon mustard, and Greek yogurt in a small bowl to make the dip. Adjust sweetness to taste.
- Let the fries cool for 2-3 minutes, then serve warm with the honey mustard dip on the side.
Notes
For extra crispiness, ensure the fries are evenly cut and not overcrowded on the baking sheet. Use convection mode if available. Adjust the honey mustard dip sweetness to your preference.
