Instructions
- Preheat your oven to 350°F (175°C) and line a 9×5-inch loaf pan with parchment paper.
- Prepare the cinnamon swirl by mixing 1/4 cup brown sugar and 1 tablespoon cinnamon in a small bowl. Set aside.
- In a large mixing bowl, mash 3 ripe bananas until smooth with some texture remaining.
- Add 3/4 cup brown sugar, 1/3 cup melted butter, 2 eggs, and 1/2 cup sour cream or yogurt to the bananas. Mix until well combined.
- In another bowl, whisk together 2 cups all-purpose flour, 1 teaspoon baking powder, 1/2 teaspoon baking soda, and 1/4 teaspoon salt.
- Using a spatula, gently fold the dry ingredients into the wet mixture. Be careful not to overmix.
- Toss 1 cup of blueberries in 1 tablespoon of flour to prevent sinking, then fold them into the batter.
- Pour half the batter into the prepared pan, sprinkle the cinnamon sugar mixture evenly over the top, then add the remaining batter.
- Bake for 55-65 minutes, or until a toothpick inserted into the center comes out clean. Start checking around 50 minutes.
- Let the bread cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
- Slice and serve. Store covered at room temperature for up to 3 days.
Notes
Use very ripe bananas with brown spots for the best flavor. Tossing blueberries in flour prevents them from sinking to the bottom. Don’t overmix the batter to ensure a tender bread. The bread is even better the next day as flavors develop!
