  • 1/4 teaspoon salt
  • 1 cup fresh blueberries

  • For Cinnamon Swirl:
  • 1/4 cup brown sugar
  • 1 tablespoon ground cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C) and line a 9×5-inch loaf pan with parchment paper.
  2. Prepare the cinnamon swirl by mixing 1/4 cup brown sugar and 1 tablespoon cinnamon in a small bowl. Set aside.
  3. In a large mixing bowl, mash 3 ripe bananas until smooth with some texture remaining.
  4. Add 3/4 cup brown sugar, 1/3 cup melted butter, 2 eggs, and 1/2 cup sour cream or yogurt to the bananas. Mix until well combined.
  5. In another bowl, whisk together 2 cups all-purpose flour, 1 teaspoon baking powder, 1/2 teaspoon baking soda, and 1/4 teaspoon salt.
  6. Using a spatula, gently fold the dry ingredients into the wet mixture. Be careful not to overmix.
  7. Toss 1 cup of blueberries in 1 tablespoon of flour to prevent sinking, then fold them into the batter.
  8. Pour half the batter into the prepared pan, sprinkle the cinnamon sugar mixture evenly over the top, then add the remaining batter.
  9. Bake for 55-65 minutes, or until a toothpick inserted into the center comes out clean. Start checking around 50 minutes.
  10. Let the bread cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
  11. Slice and serve. Store covered at room temperature for up to 3 days.

Notes

Use very ripe bananas with brown spots for the best flavor. Tossing blueberries in flour prevents them from sinking to the bottom. Don’t overmix the batter to ensure a tender bread. The bread is even better the next day as flavors develop!
