Instructions
- Preheat the oven to 350°F (175°C) and grease a 9×13-inch baking pan.
- Peel, core, and dice 3 medium apples (about 2 cups). Toss them with 1 teaspoon of cinnamon and set aside.
- In a medium bowl, combine 1 cup of all-purpose flour, 1/2 cup of brown sugar, 1/2 teaspoon of cinnamon, and 1/4 teaspoon of nutmeg. Cut in 1/2 cup of cold, cubed butter until the mixture resembles coarse crumbs. Refrigerate the topping while you make the batter.
- In a large bowl, cream together 1/2 cup of unsalted butter and 1 cup of granulated sugar until light and fluffy. Add 2 large eggs, one at a time, then mix in 1 teaspoon of vanilla extract and 1/2 cup of sour cream.
- In a separate bowl, whisk together 2 cups of all-purpose flour, 1 teaspoon of baking powder, 1/2 teaspoon of baking soda, 1/2 teaspoon of cinnamon, and a pinch of salt.
- Gradually add the dry ingredients to the wet mixture, stirring until just combined. Fold in the prepared apples.
- Spread the batter evenly into the prepared pan, then sprinkle the crumb topping over the batter.
- Bake for 40–45 minutes, or until a toothpick inserted into the center comes out clean. Let the cake cool on a wire rack.
- Once the cake has cooled slightly, drizzle with caramel sauce. Serve warm or at room temperature.
Notes
Chill the crumb topping to keep it crumbly. Test the cake for doneness around the 40-minute mark to avoid overbaking. Serve with vanilla ice cream or whipped cream for an extra treat.
