Instructions

  1. Sprinkle 2 ½ teaspoons of unflavored gelatin over 3 tablespoons of cold water in a small mixing bowl. Let it sit for 5 minutes until softened.
  2. In a small saucepan, combine 2 cups of heavy cream and ½ cup of granulated sugar. Heat over medium-low, stirring occasionally, until the sugar dissolves. Add 2 teaspoons of loose-leaf Earl Grey tea and the zest of one orange. Let it steep for 5-7 minutes, ensuring the cream doesn’t boil.
  3. Remove the saucepan from heat and strain the cream mixture through a fine mesh strainer to remove the tea leaves and zest.
  4. Stir the bloomed gelatin into the warm cream mixture until fully dissolved. Add 1 teaspoon of vanilla extract for extra depth.
