Ingredients

  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup (115g) unsalted butter
  • 1 cup (200g) sugar
  • 2 large eggs
  • Zest of 2 lemons
  • 1/4 cup (60ml) fresh lemon juice
  • 1/2 cup (120g) Greek yogurt
  • 1 cup (150g) fresh blueberries
  • 1 tablespoon flour (if using frozen blueberries)
  • 1 cup (120g) powdered sugar
  • 2 tablespoons fresh lemon juice (for glaze)

Instructions

  1. Preheat your oven to 375°F (190°C) and line your muffin tin with paper liners.
  2. In a large mixing bowl, whisk together the flour, baking powder, baking soda, and salt.
  3. In a separate bowl, cream together the butter and sugar until light and fluffy. Add the eggs one at a time, beating well after each addition.
  4. Mix in the lemon zest and lemon juice, followed by the Greek yogurt.
  5. Gradually fold the dry ingredients into the wet ingredients, being careful not to overmix. The batter should be thick and slightly lumpy.
  6. Gently fold in the blueberries. If using frozen blueberries, toss them in flour before adding to the batter.
  7. Divide the batter evenly among the muffin cups, filling each about 3/4 full.
  8. Bake for 18-22 minutes, or until a toothpick inserted into the center comes out clean. Let muffins cool in the tin for 5 minutes before transferring to a cooling rack.
  9. While the muffins cool, prepare the glaze by whisking together the powdered sugar and lemon juice until smooth.
  10. Drizzle the glaze over the cooled muffins and let it set for about 15 minutes before serving.

Notes

For best results, use fresh blueberries and room-temperature ingredients. Toss blueberries in flour to prevent sinking, and allow muffins to cool completely before glazing.
