Description

Imagine biting into a sandwich that’s packed with all the comforting flavors of a loaded baked potato – crispy bacon, melted cheese, sour cream, green onions, and fluffy potatoes, all nestled between two slices of perfectly toasted bread.


Ingredients

  • 2 slices of bread, toasted
  • 1 medium russet potato, baked and mashed
  • 2 slices of thick-cut bacon, cooked until crispy
  • 1/4 cup shredded sharp cheddar cheese
  • 2 tablespoons sour cream
  • 1 tablespoon chopped green onions
  • Butter for toasting the bread

 


Instructions

  1. Preheat a skillet over medium heat.
  2. Spread butter on one side of each slice of bread.
  3. Place one slice of bread, buttered side down, in the skillet.
  4. Layer the mashed potato, crispy bacon, shredded cheddar cheese, and green onions on top of the bread.
  5. Spread sour cream on the other slice of bread and place it on top, buttered side up.
  6. Cook the sandwich until the bottom slice is golden brown, then carefully flip and cook the other side until golden and the cheese is melted.
  7. Remove from the skillet, slice in half, and serve warm.

 

Notes

This sandwich is a great way to use up leftover baked or mashed potatoes. Feel free to experiment with different cheeses or add extra toppings like chives or hot sauce for a twist.
