- 2 slices of bread, toasted
- 1 medium russet potato, baked and mashed
- 2 slices of thick-cut bacon, cooked until crispy
- 1/4 cup shredded sharp cheddar cheese
- 2 tablespoons sour cream
- 1 tablespoon chopped green onions
- Butter for toasting the bread
Instructions
- Preheat a skillet over medium heat.
- Spread butter on one side of each slice of bread.
- Place one slice of bread, buttered side down, in the skillet.
- Layer the mashed potato, crispy bacon, shredded cheddar cheese, and green onions on top of the bread.
- Spread sour cream on the other slice of bread and place it on top, buttered side up.
- Cook the sandwich until the bottom slice is golden brown, then carefully flip and cook the other side until golden and the cheese is melted.
- Remove from the skillet, slice in half, and serve warm.
