  • 14 oz (400 g) canned diced tomatoes
  • 15 oz (425 g) canned kidney beans
  • 2 tbsp chili powder
  • 1 tsp ground cumin
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 2 cups (200 g) shredded cheese (cheddar and Monterey Jack)
  • 1 package cornbread mix

 


Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a skillet, cook the ground beef or turkey over medium heat until browned. Drain any excess fat.
  3. Add the diced tomatoes, kidney beans, chili powder, cumin, onion, and garlic to the skillet. Stir well and let simmer for 10 minutes.
  4. Transfer the chili mixture to a casserole dish and spread evenly.
  5. Sprinkle the shredded cheese over the chili mixture.
  6. Prepare the cornbread mix according to package instructions and pour it over the cheese layer.
  7. Bake in the preheated oven for 25-30 minutes, or until the cornbread is golden and cooked through.
  8. Let cool for a few minutes before serving. Enjoy!
