- 1 lb (450 g) ground beef or turkey
- 14 oz (400 g) canned diced tomatoes
- 15 oz (425 g) canned kidney beans
- 2 tbsp chili powder
- 1 tsp ground cumin
- 1 medium onion, diced
- 2 cloves garlic, minced
- 2 cups (200 g) shredded cheese (cheddar and Monterey Jack)
- 1 package cornbread mix
Instructions
- Preheat your oven to 375°F (190°C).
- In a skillet, cook the ground beef or turkey over medium heat until browned. Drain any excess fat.
- Add the diced tomatoes, kidney beans, chili powder, cumin, onion, and garlic to the skillet. Stir well and let simmer for 10 minutes.
- Transfer the chili mixture to a casserole dish and spread evenly.
- Sprinkle the shredded cheese over the chili mixture.
- Prepare the cornbread mix according to package instructions and pour it over the cheese layer.
- Bake in the preheated oven for 25-30 minutes, or until the cornbread is golden and cooked through.
- Let cool for a few minutes before serving. Enjoy!
