- 4 Russet Potatoes
- 6 slices of crispy bacon
- 1 cup sharp cheddar cheese, shredded
- 1/2 cup sour cream
- 2 tablespoons chives or green onions, chopped
- 2 tablespoons butter
Instructions
- Preheat your oven to 400°F (200°C).
- Wash and dry the Russet potatoes. Pierce each potato several times with a fork.
- Bake the potatoes directly on the oven rack for 45-60 minutes, or until tender.
- While the potatoes are baking, cook the bacon until crispy. Crumble and set aside.
- Once the potatoes are done, let them cool slightly. Cut each potato in half lengthwise and scoop out most of the flesh, leaving a thin layer inside the skin.
- Mix the scooped-out potato flesh with butter, sour cream, and half of the cheddar cheese. Season with salt and pepper to taste.
- Fill the potato skins with the mixture and top with the remaining cheddar cheese.
- Place the filled potato skins back in the oven and bake for 10-15 minutes, or until the cheese is melted and bubbly.
- Top with crispy bacon and chopped chives or green onions before serving.
Notes
Feel free to customize the toppings to your liking. Add jalapeños for a spicy kick or swap cheddar for another cheese variety.
