Loaded Potato Recipe Perfect for Dinner Indulgence

A hearty and indulgent dish featuring crispy potato skins, creamy fillings, and savory toppings. Perfect for weeknight dinners or casual dinner parties.


Ingredients

  • 4 Russet Potatoes
  • 6 slices of crispy bacon
  • 1 cup sharp cheddar cheese, shredded
  • 1/2 cup sour cream
  • 2 tablespoons chives or green onions, chopped
  • 2 tablespoons butter

 


Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash and dry the Russet potatoes. Pierce each potato several times with a fork.
  3. Bake the potatoes directly on the oven rack for 45-60 minutes, or until tender.
  4. While the potatoes are baking, cook the bacon until crispy. Crumble and set aside.
  5. Once the potatoes are done, let them cool slightly. Cut each potato in half lengthwise and scoop out most of the flesh, leaving a thin layer inside the skin.
  6. Mix the scooped-out potato flesh with butter, sour cream, and half of the cheddar cheese. Season with salt and pepper to taste.
  7. Fill the potato skins with the mixture and top with the remaining cheddar cheese.
  8. Place the filled potato skins back in the oven and bake for 10-15 minutes, or until the cheese is melted and bubbly.
  9. Top with crispy bacon and chopped chives or green onions before serving.

 

Notes

Feel free to customize the toppings to your liking. Add jalapeños for a spicy kick or swap cheddar for another cheese variety.
