  • Author: David
  • Total Time: 45 minutes
  • Yield: 24 bars 1x

Description

Rich, gooey, and packed with the perfect balance of peanut butter and chocolate, these cookie bars are a crowd-pleasing dessert perfect for any occasion.

Ingredients

Scale
  • 1 cup (240g) creamy peanut butter
  • 1 cup (226g) unsalted butter, softened
  • 1 cup (200g) brown sugar
  • 1/2 cup (100g) granulated sugar
  • 2 large eggs, room temperature
  • 2 teaspoons vanilla extract
  • 2 1/4 cups (280g) all-purpose flour
  • 1 teaspoon baking powder
  • 1 1/2 cups (270g) semi-sweet chocolate chips
  • Flaky sea salt (optional)

Instructions

  1. Preheat the oven to 350°F (175°C). Line a 9×13-inch baking pan with parchment paper.
  2. In a large bowl, cream together peanut butter, softened butter, brown sugar, and granulated sugar until smooth.
  3. Beat in the eggs one at a time, then stir in the vanilla extract.
  4. In a separate bowl, whisk together the flour and baking powder.
  5. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  6. Fold in the chocolate chips, reserving a handful for sprinkling on top.
  7. Spread the dough evenly into the prepared pan. Sprinkle the reserved chocolate chips and flaky sea salt on top, if desired.
  8. Bake for 25-30 minutes, or until the edges are golden and the center is set. A toothpick inserted into the center should come out with a few moist crumbs.
  9. Let the bars cool completely in the pan before slicing into squares or rectangles. Serve and enjoy!

Notes

For extra gooeyness, avoid overbaking. Customize the toppings with nuts, pretzels, or a drizzle of melted chocolate. Store in an airtight container in the refrigerator for up to 5 days or freeze for up to 3 months.
