  • 1/2 cup (100g) granulated sugar
  • 1/2 cup (90g) brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 teaspoon white vinegar
  • 1 tablespoon red food coloring
  • 8 ounces (226g) cream cheese
  • 1/4 cup (57g) unsalted butter
  • 2 cups (240g) powdered sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper.
  2. In a bowl, whisk together flour, cocoa powder, baking soda, and salt. Set aside.
  3. In another bowl, beat unsalted butter, granulated sugar, and brown sugar until light and fluffy, about 2-3 minutes.
  4. Mix in the egg, vanilla extract, white vinegar, and red food coloring.
  5. Gradually add the dry ingredients to the wet ingredients, mixing just until combined. Don’t overmix.
  6. Use a cookie scoop to portion out dough onto the prepared baking sheets, leaving about 2 inches (5cm) between cookies. Bake for 9-11 minutes.
  7. Let cookies cool on the baking sheet for 5 minutes, then transfer to a cooling rack.
  8. For the filling, beat cream cheese, unsalted butter, powdered sugar, and vanilla extract until smooth.
  9. Spread or pipe the filling onto the flat side of a cookie. Top with another cookie to create a sandwich.

Notes

Chill the dough for 20 minutes if it feels sticky. Use a piping bag for neat filling distribution. Store in an airtight container in the refrigerator for up to 5 days or freeze individually for up to 2 months.
