Description

These Ultimate S’mores Cookie Bars combine gooey marshmallows, melty chocolate, and crunchy graham crackers into a decadent dessert that’s perfect year-round.


Ingredients

  • 2 1/4 cups (280 g) all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 3/4 cup (170 g) unsalted butter, softened
  • 1 cup (200 g) brown sugar
  • 1/2 cup (100 g) white sugar
  • 2 large eggs, room temperature
  • 2 teaspoons vanilla extract
  • 1 cup (90 g) crushed graham crackers
  • 1 cup (240 g) marshmallow fluff
  • 1 cup (170 g) chocolate pieces (milk and semi-sweet mix)
  • 1 cup mini marshmallows

Instructions

  1. Preheat your oven to 350°F (175°C). Line a 9×13-inch baking pan with parchment paper.
  2. In a bowl, whisk together the flour, baking soda, and salt.
  3. In another bowl, cream the softened butter with brown sugar and white sugar until light and fluffy. Beat in the eggs and vanilla extract.
  4. Gradually add the dry ingredients to the wet ingredients. Mix until just combined.
  5. Press half of the dough into the prepared pan. Sprinkle crushed graham crackers over the dough. Spread marshmallow fluff on top, then add a layer of chocolate pieces.
  6. Drop the remaining dough in small clumps over the top. Sprinkle mini marshmallows evenly.
  7. Bake for 25–30 minutes, or until golden.
  8. Let the bars cool completely before slicing.

Notes

For best results, don’t overmix the dough. Chill the dough for 15 minutes if your kitchen is warm. Use a serrated knife to cut the bars cleanly.
