- 2 cups (300g) fresh strawberries, diced
- 2 tablespoons (30ml) lemon juice
- 1/4 cup (50g) granulated sugar
- 8 ounces (225g) cream cheese, softened
- 1/2 cup (60g) powdered sugar
- 1 teaspoon (5ml) vanilla extract
- 1 cup (240ml) heavy whipping cream, cold
- 8–10 graham crackers, crushed
Instructions
- Prepare the Strawberry Compote: Combine diced strawberries, lemon juice, and granulated sugar in a saucepan. Cook over medium heat for 8–10 minutes, stirring occasionally, until thickened. Let cool completely.
- Make the Cheesecake Filling: Beat cream cheese until smooth. Add powdered sugar and vanilla extract, mixing until combined. In a separate bowl, whip heavy whipping cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture.
- Crush the Graham Crackers: Place graham crackers in a zip-top bag and crush into fine crumbs using a rolling pin or food processor.
- Layer the Parfaits: Start with a layer of crushed graham crackers at the bottom of glasses. Add a layer of cheesecake filling, followed by a layer of strawberry compote. Repeat until glasses are full, finishing with a dollop of cheesecake filling and fresh strawberry slices for garnish.
- Chill and Serve: Refrigerate the parfaits for at least 1 hour before serving. Serve cold.
Notes
Chill your mixing bowl and beaters for faster whipped cream preparation. Use a piping bag for neat layers. Parfaits taste even better after chilling overnight.
