Ingredients

  • 1/2 cup (60g) unsweetened cocoa powder
  • 3/4 cup (95g) all-purpose flour
  • 1 cup (200g) granulated sugar
  • 1/2 cup (100g) brown sugar
  • 3 large eggs
  • 1 tsp vanilla extract
  • 8 oz (225g) mascarpone cheese
  • 1/4 cup (60ml) heavy cream
  • 1/4 cup (50g) powdered sugar
  • 1 tsp instant espresso powder
  • Dark chocolate (at least 70% cocoa content)
  • Cocoa powder for dusting

Instructions

  1. Preheat the oven to 350°F (175°C). Line a 9×9-inch brownie pan with parchment paper.
  2. In a microwave-safe bowl, melt the dark chocolate with 1/2 cup (120g) butter. Stir until smooth and set aside to cool slightly.
  3. Whisk together 1 cup (200g) granulated sugar, 1/2 cup (100g) brown sugar, and 3 large eggs until creamy. Mix in the melted chocolate and 1 tsp vanilla extract.
  4. Gradually fold in 1/2 cup (60g) unsweetened cocoa powder and 3/4 cup (95g) all-purpose flour.
  5. Pour the batter into the prepared pan and bake for 25-30 minutes. Test with a toothpick; it should come out with moist crumbs, not wet batter.
  6. Whisk together 8 oz (225g) mascarpone, 1/4 cup (60ml) heavy cream, 1/4 cup (50g) powdered sugar, and 1 tsp instant espresso powder until smooth.
  7. Let the brownies cool completely. Spread the mascarpone mixture evenly over the top.
  8. Sift unsweetened cocoa powder over the mascarpone layer for a classic tiramisu finish.
  9. Refrigerate for at least 2 hours to let the layers set and flavors meld together.

Notes

Chilling the brownies for at least 2 hours enhances the flavors and helps the layers set. For clean slices, use a hot knife and wipe it clean between cuts.
