Description
This ice-cold, pink, and frothy whipped strawberry cream soda is a quick and easy summer drink, featuring real strawberries and a creamy whipped topping. Perfect for parties, poolside lounging, or a refreshing afternoon treat.
Ingredients
- 1 cup fresh strawberries, hulled (about 150g)
- 2 tablespoons granulated sugar
- 1/2 cup heavy whipping cream
- 1/2 teaspoon vanilla extract
- 2 cups chilled club soda or lemon-lime soda
- Ice cubes, as needed
- Optional garnishes: sliced strawberries, fresh mint, extra whipped cream
Instructions
- Hull and wash the strawberries. If using frozen, thaw and drain first.
- Add strawberries and sugar to a blender or food processor. Blend until smooth and thick.
- Pour cold heavy whipping cream and vanilla extract into a mixing bowl. Whip with a whisk or electric mixer until soft peaks form.
- Gently fold the strawberry puree into the whipped cream until just combined and fluffy.
- Fill two tall glasses with ice cubes. Pour 1 cup chilled club soda or lemon-lime soda into each glass.
- Spoon dollops of whipped strawberry cream on top of the soda. Spread gently to float over the bubbles.
- Add optional garnishes: sliced strawberries, mint, or extra whipped cream. Serve immediately.
Notes
For a vegan version, use coconut cream instead of heavy cream. Adjust sugar based on strawberry sweetness. Strain strawberry puree for a smoother topping. Serve immediately for best fizz and fluff. The whipped cream topping can be made ahead and refrigerated for up to 24 hours.
