- 2 tablespoons (30ml) olive oil
- 2 tablespoons (30ml) honey, plus 1 teaspoon for drizzling

- 1 teaspoon smoked paprika
- 1 teaspoon dried thyme
- Salt, to taste
- Pepper, to taste
Instructions
- Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Wash and pat dry the baby potatoes. Cut them in half for even cooking.
- In a large bowl, combine the potatoes, olive oil, honey, minced garlic, smoked paprika, dried thyme, salt, and pepper. Toss until evenly coated.
- Scatter the bacon pieces across the baking sheet.
- Spread the potatoes in a single layer over the bacon pieces, ensuring they are not overcrowded.
- Roast in the oven for 20 minutes. Flip the potatoes and bacon using tongs, then roast for an additional 15-20 minutes, or until the potatoes are golden and crispy.
- Drizzle an extra teaspoon of honey over the potatoes after roasting for a glossy finish.
Notes
To prevent overcrowding, use two baking sheets if necessary. Keep an eye on the honey during the last few minutes of roasting to avoid burning.
