  • 6 slices thick-cut bacon, cut into small pieces
  • 2 tablespoons (30ml) olive oil
  • 2 tablespoons (30ml) honey, plus 1 teaspoon for drizzling
  • 2 garlic cloves, minced
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried thyme
  • Salt, to taste
  • Pepper, to taste

Instructions

  1. Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Wash and pat dry the baby potatoes. Cut them in half for even cooking.
  3. In a large bowl, combine the potatoes, olive oil, honey, minced garlic, smoked paprika, dried thyme, salt, and pepper. Toss until evenly coated.
  4. Scatter the bacon pieces across the baking sheet.
  5. Spread the potatoes in a single layer over the bacon pieces, ensuring they are not overcrowded.
  6. Roast in the oven for 20 minutes. Flip the potatoes and bacon using tongs, then roast for an additional 15-20 minutes, or until the potatoes are golden and crispy.
  7. Drizzle an extra teaspoon of honey over the potatoes after roasting for a glossy finish.

Notes

To prevent overcrowding, use two baking sheets if necessary. Keep an eye on the honey during the last few minutes of roasting to avoid burning.
