Description

A bright and flavorful dish featuring tender orzo pasta, fresh lemon zest, aromatic herbs, and perfectly roasted shrimp. Ideal for a simple yet elegant lunch or dinner.


Ingredients

  • 1 cup (200g) orzo pasta
  • 1 lb (450g) shrimp, peeled and deveined
  • 1 lemon (zest and juice)
  • 3 tablespoons olive oil
  • 2 tablespoons fresh parsley, chopped
  • 2 tablespoons fresh dill, chopped
  • 1 clove garlic, minced
  • 1 teaspoon red pepper flakes
  • Salt and pepper to taste
  • Grated Parmesan cheese (optional)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Bring a large pot of salted water to a boil. Add orzo and cook for 8-10 minutes, or until al dente. Drain and set aside.
  3. In a mixing bowl, toss shrimp with 2 tablespoons of olive oil, minced garlic, red pepper flakes, and a pinch of salt and pepper. Spread on a baking sheet in a single layer.
  4. Roast shrimp in the oven for 8-10 minutes, flipping halfway through, until pink and opaque.
  5. In a bowl, whisk together 3 tablespoons of olive oil, the zest and juice of 1 lemon, and a pinch of salt. Stir in chopped parsley and dill.
  6. Combine cooked orzo and roasted shrimp in a large bowl. Pour the lemon herb dressing over the top and mix well.
  7. Sprinkle with Parmesan cheese if desired, garnish with extra herbs, and serve warm or at room temperature.

Notes

For best results, use fresh herbs and freshly squeezed lemon juice. Adjust seasoning to taste and avoid overcooking the orzo or shrimp.
